To save the document as plain text, click "File," and then "Export," and then choose "Plain Text. Sometimes, there are certain companies that have requirements of applying certain fonts and colors on the resumes; then you have to follow the standard.
Once you have chosen the one that you feel best fits your needs, just click on it and Pages will render the template. You'll know what skills are best to list for an individual job by closely reading the job posting, and then pulling out the required or desired skills the employer wants that apply to you.
